Gastronomy
The Regional Umbrian Gastronomy offers a large choice of dishes. The area of Trasimeno offers delicious and typical fish dishes. Nothing better to test them in our Restaurant.
Some regional recipes:
Tegamaccio Brown onion, parsley, oil, pepper, tomatoes, chilly and lake fish (perch, tench, eel). Separately in a terrine prepare about 1 Kg of tinned peeled Tomatoes. When the onion is half cooked, put the fish and tomato prepared before, add some white wine and water. Cook slowly, moving horizontally the pan, don’t touch the fish with fork.
Regina in porchetta The “Queen” is the typical carp of Trasimeno Lake. To roast it you have to prepare a chopped garlic with lard, fennel, salt and pepper. Put the chopped inside of the carp’s stomach. Bind the fish with some rosemary. Cook the fish on a spit or to bake, brushing with lemon and oil. Serving when the skin is crispy.
